July- Vegetarian S'mores Pie

Vegetarian S'mores Pie

CRUST

1.5 Cups Graham Cracker Crumbs(I use HoneyMaid)
1/4 Cup turbinado sugar (I use Sugar in the Raw)
1/4 Cup vegan margarine, melted (I use Willowrun)

Preheat oven to 375f
Mix all ingrediants together until well blended
Press firmly into bottom and sides of a 9" pie dish
Bake 8 minutes, or until lightly browned



FILLING

6 Oz. Plain milk chocolate (vegan chocolate can be used but makes it much richer)
15 Oz. Dandies vegan Marshmallows (about 1.5 bags)

Bring oven temp down to 325f
Break the chocolate into small pieces and place in one layer on top of the crust
Add the marshmallows on top of the chocolate
Place in the oven and cook until the marshmallows are starting to melt and connect, about 5 minutes depending on the oven. *WATCH CONSTANTLY*
Remove from the oven and let cool slightly. Serve warm.

Or just use a less rich vegan chocolate. I love Equal Exchange 55% chocolate. Still rich, but not as bad as using a much darker one. Also adding powdered soy milk works wonders. And perhaps a little almond butter melted in with the chocolate. Rich, yes, but not overwhelmingly chocolatey.
